Chop the broccoli, red bell pepper, and red onion into uniform, bite-sized pieces.
Spread the vegetables on a large baking sheet and toss with 0.5 tbsp of olive oil, a pinch of sea salt, and black pepper.
Roast the vegetables for 15-20 minutes until they are tender-crisp and slightly charred around the edges.
While the vegetables roast, pat the chicken thighs dry with paper towels and season both sides evenly with garlic powder, onion powder, dried oregano, sea salt, and black pepper.
Heat the remaining 0.5 tbsp of olive oil in a large skillet over medium-high heat.
Place the chicken thighs in the hot skillet and sear for 5-7 minutes per side until the exterior is golden brown and the internal temperature reaches 165°F.
Remove the chicken from the heat and let it rest for 2 minutes before serving alongside the roasted vegetable medley.
