Mildly Spicy Chicken Pasta Bowl
Sautéed chicken breast and tender chickpea pasta tossed in a vibrant, lightly spiced tomato sauce with a velvety finish of parmesan.
INGREDIENTS
4 oz chicken breast
1.5 oz chickpea pasta
1 tsp olive oil
0.5 cup tomato puree
0.5 cup red bell pepper
0.25 cup yellow onion
1 clove garlic
0.25 tsp red pepper flakes
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp parmesan cheese
1 tbsp fresh parsley
PREPARATION
Bring a medium pot of salted water to a boil and cook the chickpea pasta according to package instructions until al dente.
While the pasta is boiling, heat the olive oil in a large skillet over medium-high heat.
Dice the chicken breast into bite-sized pieces and season with sea salt and black pepper.
Add the chicken to the skillet and sauté until golden brown and cooked through, then remove and set aside.
In the same skillet, add the diced yellow onion and chopped red bell pepper, cooking until the vegetables are tender and slightly caramelized.
Stir in the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
Pour in the tomato puree and simmer for 3 minutes to thicken the sauce slightly.
Drain the pasta and add it to the skillet along with the cooked chicken, tossing everything together to coat evenly.
Transfer to a bowl and garnish with grated parmesan cheese and freshly chopped parsley before serving.
