Seared Salmon Fillet with Steamed Asparagus and Herbed Brown Rice
Pan-seared wild salmon served with tender steamed asparagus and fluffy herbed brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1 cup Steamed Asparagus
1 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
1 tbsp Fresh Parsley, chopped
PREPARATION
Pat the salmon fillet dry with a paper towel and season lightly with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is crisp.
Carefully flip the fillet and cook for another 3 to 4 minutes until the salmon is opaque and flakes easily.
While the salmon cooks, steam the asparagus spears for 3 to 5 minutes until they are bright green and tender-crisp.
Warm the pre-cooked brown rice and fold in the fresh chopped parsley and half of the lemon juice.
Plate the herbed brown rice, top with the seared salmon, and serve the asparagus on the side with a final squeeze of lemon juice.
