1 clove Garlic
0.5 tsp Fresh rosemary
0.5 tsp Fresh thyme
0.25 tsp Sea salt

1 cup Asparagus spears

PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking to reach room temperature.
Pat the ribeye dry with paper towels and season both sides with sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat until it begins to smoke slightly.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare.
While the steak sears, toss the asparagus with olive oil and a pinch of salt, then add to the side of the pan to char.
During the last 2 minutes of cooking, add the ghee, garlic, rosemary, and thyme to the skillet.
Tilt the pan and use a spoon to continuously baste the steak with the melted herb ghee.
