2 cups Cauliflower Florets
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Plain Greek Yogurt
1 clove Garlic, minced

PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of cauliflower steaming, add the asparagus spears to the steamer basket until tender-crisp and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower to a bowl or food processor. Add the Greek yogurt, minced garlic, and a pinch of salt. Mash or blend until smooth and velvety.
Plate the mashed cauliflower first, top with the seared salmon, and serve the steamed asparagus on the side with a fresh squeeze of lemon juice.
