0.25 tsp Black pepper
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking and season both sides with sea salt and black pepper.
Trim the woody ends off the asparagus spears and set aside.
Heat the olive oil in a heavy cast-iron skillet over medium-high heat until shimmering.
Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare, or until a golden-brown crust forms.
Reduce heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
