Seared Salmon with Garlic Green Beans and Brown Rice
Crispy pan-seared salmon served over fluffy brown rice and garlic-sautéed green beans, finished with a squeeze of fresh lemon for a bright, zesty finish.
INGREDIENTS
6.5 oz Wild Sockeye Salmon Fillet
1/2 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 Lemon wedge
PREPARATION
Pat the salmon fillet completely dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat half of the olive oil in a medium non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden-brown crust forms.
Flip the salmon carefully and cook for another 3-4 minutes until the fish is opaque and flakes easily.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining oil and sauté the minced garlic for 30 seconds until fragrant.
Add the green beans and a tablespoon of water to the pan, then cover and steam for 3-5 minutes until tender-crisp.
Serve the seared salmon and garlic green beans over the warm brown rice and finish with a bright squeeze of fresh lemon juice.
