Seared Salmon Filet with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with crisp garlic-infused green beans and nutty brown rice, finished with a bright squeeze of lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon
0.5 cup cooked Brown Rice
1 cup Green Beans
1 teaspoon Olive Oil
1 clove Garlic
0.5 Lemon
PREPARATION
Pat the salmon dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
While the salmon cooks, heat the remaining olive oil in a separate skillet over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Add the green beans and a tablespoon of water to the skillet, then cover and steam for 3-4 minutes until they are tender-crisp.
Fluff the pre-cooked brown rice and place it on a plate.
Top the rice with the seared salmon and serve the garlic green beans on the side with a fresh squeeze of lemon juice.
