Garlic-Ginger Glazed Tofu Stir-Fry
Crispy pan-seared tofu tossed in a zesty garlic-ginger glaze with vibrant broccoli and edamame for a high-volume, nutrient-dense meal.
INGREDIENTS
12 oz Firm tofu
0.5 cup Shelled edamame
1.5 cup Broccoli florets
1 medium Red bell pepper
2 clove Garlic
1 tbsp Fresh ginger
2 tbsp Tamari
0.5 tsp Sesame oil
1 tsp Maple syrup
0.25 tsp Red pepper flakes
0.5 tsp Avocado oil
1 tbsp Water
PREPARATION
Press the tofu for 15 minutes to remove excess water, then cut into 1-inch cubes.
In a small jar, whisk together the tamari, minced garlic, grated ginger, sesame oil, maple syrup, red pepper flakes, and water.
Heat the avocado oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the skillet and sear for 8-10 minutes, turning occasionally until all sides are golden and crispy.
Toss in the broccoli florets, sliced red bell pepper, and edamame, sautéing for 5 minutes until the vegetables are bright and tender-crisp.
Pour the prepared garlic-ginger sauce over the mixture and stir constantly for 1-2 minutes until the glaze coats every piece.
