Seared Salmon with Garlic Green Beans and Mashed Sweet Potatoes
Pan-seared wild salmon served with garlicky green beans and creamy mashed sweet potatoes, finished with a squeeze of bright lemon.
INGREDIENTS
9 ounces Salmon Fillet
150 grams Sweet Potato
150 grams Green Beans
1 teaspoon Olive Oil
0.75 teaspoon Ghee
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 15 minutes.
Drain the potatoes and mash them with the ghee until smooth and creamy.
While potatoes boil, trim the green beans and mince the garlic.
Heat half the olive oil in a skillet over medium heat, add green beans and garlic, and sauté until tender-crisp.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a separate non-stick skillet over medium-high heat.
Place salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Plate the salmon alongside the mashed sweet potatoes and garlic green beans.
