PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half a teaspoon of olive oil, cinnamon, and a pinch of salt.
Spread the potatoes on the baking sheet and roast for 20-25 minutes until tender and slightly browned.
Season the salmon fillet with salt and pepper on both sides.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the fish is opaque and flakes easily.
