Seared Salmon with Creamy Garlic Mashed Cauliflower
Pan-seared salmon fillet served over a bed of velvety garlic-infused cauliflower mash, finished with a squeeze of fresh lemon and a sprinkle of crisp parsley.
INGREDIENTS
7.5 oz Salmon Fillet
2 cups Cauliflower Florets
1 tbsp Ghee
2 tbsp Plain Non-fat Greek Yogurt
2 cloves Garlic, minced
1 tsp Lemon Juice
1 tbsp Fresh Parsley, chopped
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower and garlic to a food processor or blender.
Add the remaining ghee and Greek yogurt to the cauliflower, then pulse until the mixture is smooth and velvety.
Spoon the mashed cauliflower onto a plate and top with the seared salmon.
Garnish with a squeeze of lemon juice and fresh chopped parsley before serving.
