Baked Salmon with Garlic Green Beans and Cauliflower Mash
Oven-roasted salmon fillet served with garlicky green beans and creamy cauliflower mash, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1 cup Green Beans
2 cups Cauliflower florets
1/4 cup Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Fresh lemon wedges
Sea salt and black pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the salmon fillet on the baking sheet, drizzle with half of the olive oil, and season with sea salt, pepper, and a squeeze of lemon.
Bake the salmon for 12-15 minutes or until it flakes easily with a fork.
While the salmon bakes, steam the cauliflower florets until very tender, about 8-10 minutes.
Transfer the steamed cauliflower to a blender or food processor with the Greek yogurt and a pinch of salt, blending until smooth and creamy.
In a non-stick skillet, heat the remaining olive oil over medium heat and sauté the green beans and minced garlic for 5-7 minutes until the beans are tender-crisp.
Plate the cauliflower mash and green beans alongside the baked salmon and serve with an extra lemon wedge for a zesty finish.
