8.5 ounces Cod Fillet
1.5 cups Cauliflower florets
1 cup fresh Green Beans
1.5 teaspoons Extra Virgin Olive Oil
1 tablespoon Non-fat Greek Yogurt
1 clove Garlic, minced
1 tablespoon fresh Lemon Juice
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
While cauliflower steams, trim the green beans and mince the garlic.
Transfer the steamed cauliflower to a blender or food processor, add the Greek yogurt and a pinch of salt, and blend until completely smooth and creamy.
Heat half of the olive oil in a skillet over medium heat. Add the green beans and sauté for 5 minutes. Stir in the minced garlic and lemon juice, cooking for another 2 minutes until the beans are tender-crisp.
Remove the beans from the skillet and set aside. Wipe the pan clean and add the remaining olive oil.
Season the cod fillet with salt and pepper. Sear the cod for 3-4 minutes per side until golden brown and the fish flakes easily with a fork.
