Preheat your oven to 400°F.
Scrub the potato thoroughly, prick the skin with a fork, and rub with olive oil and a pinch of sea salt.
Place the potato directly on the oven rack and bake for 45 to 60 minutes until the center is soft.
While the potato bakes, cook the turkey bacon in a skillet over medium heat until crisp, then finely chop.
In the same skillet, brown the ground turkey with garlic powder, salt, and pepper until fully cooked through.
Slice the baked potato in half lengthwise and carefully scoop out the flesh into a bowl, leaving a thin shell.
Mash the potato flesh with the Greek yogurt, cooked turkey, and half of the cheddar cheese until well combined.
Spoon the mixture back into the potato shells and top with the remaining cheddar and chopped turkey bacon.
Place the stuffed potatoes on a baking sheet and broil for 3 to 5 minutes until the cheese is melted and bubbly.
Garnish with freshly chopped green onions and serve immediately.
