5.5 oz Salmon Fillet
130g Sweet Potato
100g Green Beans
1 tbsp Avocado Oil
0.5 tbsp Ghee
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 12-15 minutes until fork-tender.
Drain the sweet potatoes and mash them with the ghee and a pinch of sea salt until smooth and creamy.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the avocado oil in a skillet over medium heat, add the green beans and garlic, and sauté for 5-7 minutes until crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
In a separate non-stick skillet, heat the remaining avocado oil over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Plate the salmon alongside the sweet potato mash and green beans, finishing with a fresh squeeze of lemon juice.
