PREPARATION
Bring a small pot of water to a boil, carefully lower in the eggs, and cook for 7 minutes to achieve a jammy yolk.
Immediately transfer the eggs to an ice bath for 5 minutes, then peel and slice them in half.
Season the sirloin steak on both sides with the sea salt and black pepper.
