Dip the chicken breast into the egg wash, allowing any excess to drip off, then press firmly into the almond flour mixture until fully coated.
Heat the olive oil in a non-stick skillet over medium heat.
Add the chicken to the skillet and cook for 4 to 5 minutes per side, or until the coating is golden brown and the chicken is cooked through.
Spread the marinara sauce over the top of the chicken and sprinkle with the mozzarella cheese.
Cover the skillet with a lid for 1 to 2 minutes until the cheese is completely melted and bubbly.
In a separate small pan, flash-sauté the zucchini noodles for 2 minutes until just tender, then serve the chicken parmesan over the noodles.
