Seared Salmon Fillet with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served over nutty brown rice with a side of snappy green beans sautéed in plenty of garlic and finished with a bright squeeze of lemon.
INGREDIENTS
7.5 ounces Wild Atlantic Salmon Fillet
0.5 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Fresh Garlic
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is golden and crisp.
Flip the fillet and cook for an additional 2 to 3 minutes until the salmon is just opaque throughout.
While the salmon cooks, heat the remaining oil in a separate pan and sauté the minced garlic for 30 seconds until fragrant.
Add the green beans and a tablespoon of water to the garlic, cover, and steam for 3 to 4 minutes until tender-crisp.
Plate the salmon and garlic green beans over the warm brown rice and serve with a fresh lemon wedge.
