Sautéed chicken and rice noodles tossed in a vibrant tamarind-style sauce, finished with crunchy peanuts and fresh bean sprouts for a satisfying texture.
INGREDIENTS
5 oz Chicken breast
1 oz Brown rice noodles
1 large Egg
1 cup Bean sprouts
2 tbsp Green onions
1 tbsp Tamari
1 tbsp Lime juice
0.5 tsp Honey
1 tsp Avocado oil
1 tbsp Peanuts
0.25 tsp Red pepper flakes
1 clove Garlic
PREPARATION
Soak the brown rice noodles in hot water for 10 minutes until tender, then drain and set aside.
In a small bowl, whisk together the tamari, lime juice, honey, and red pepper flakes to create the sauce.
Heat the avocado oil in a large skillet over medium-high heat and sauté the sliced chicken breast and minced garlic until cooked through.
Push the chicken to one side of the skillet, crack the egg into the empty space, and scramble until just set.
Add the drained noodles and the prepared sauce to the skillet, tossing everything together for 2 minutes until well coated.
Remove from heat and fold in the bean sprouts and sliced green onions, then top with crushed peanuts before serving.
