Bacon-Wrapped Jalapeño Sliders
Baked beef sliders stuffed with a creamy jalapeño-feta filling and wrapped in crispy bacon, served on toasted sweet potato rounds.
INGREDIENTS
7 oz Ground beef 93% lean
1 slice Center-cut bacon
1 large Jalapeño
1 tbsp Plain Greek yogurt
0.25 oz Feta cheese
1 small Sweet potato
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Avocado oil
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Slice the sweet potato into 0.5-inch thick rounds, toss them with avocado oil, and roast for 20 minutes until they are tender and slightly browned.
While the potatoes roast, finely dice the jalapeño and mix it in a small bowl with the plain Greek yogurt and crumbled feta cheese.
In a separate bowl, combine the ground beef with the garlic powder, sea salt, and black pepper until well incorporated.
Form the beef into 4 small patties; place the jalapeño mixture in the center of two patties, top with the remaining two patties, and pinch the edges to seal the filling inside.
Cut each bacon slice in half and wrap two halves around each slider, then place the sliders on a wire rack set over a baking sheet.
Bake the sliders for 15-18 minutes until the bacon is crispy and the beef is cooked through.
Place each slider onto a roasted sweet potato round and serve immediately.
