Pan-Seared Steak with Garlic Herb Butter
Pan-seared top sirloin basted in a fragrant garlic-herb ghee, served with crisp-tender roasted asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Top sirloin steak
1 tsp Avocado oil
1 tbsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
15 spears Asparagus
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat the avocado oil in a cast-iron skillet over medium-high heat until the oil is shimmering and just starting to smoke.
Carefully place the steak in the hot skillet and sear for 4 minutes without moving it to ensure a deep, golden-brown crust forms.
Flip the steak and immediately add the ghee, smashed garlic cloves, rosemary, and thyme to the side of the pan.
Tilt the pan slightly so the melting ghee pools with the herbs and garlic, then use a large spoon to continuously baste the steak with the hot fat for 3 minutes.
Transfer the steak to a cutting board to rest for at least 5 minutes, leaving the juices and fat in the pan.
Add the asparagus spears to the same skillet and sauté for 4 to 5 minutes over medium heat until they are bright green and tender-crisp.
Slice the steak against the grain and serve immediately alongside the herb-infused asparagus.
