Seared Salmon with Roasted Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and oven-roasted asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
3 tbsp Non-fat Greek Yogurt
2 tsp Olive Oil
2 cloves Garlic
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss with half the olive oil, salt, and pepper on the prepared sheet.
Roast the asparagus for 12 to 15 minutes until tender and slightly charred.
While the asparagus roasts, steam the cauliflower florets until they are very soft, about 8 to 10 minutes.
Transfer the steamed cauliflower to a food processor with the Greek yogurt and minced garlic, blending until creamy and smooth.
Pat the salmon dry and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side up for 4 minutes, then flip and cook for another 3 to 4 minutes until the exterior is golden.
Plate the salmon over the garlic mash with the roasted asparagus on the side.
