PREPARATION
Remove the steak from the refrigerator 15 minutes before cooking and season both sides with sea salt and black pepper.
Bring a small saucepan of water to a boil, carefully lower the eggs into the water, and simmer for 6.5 minutes for a jammy yolk.
While the eggs cook, heat the olive oil in a cast-iron skillet over medium-high heat until shimmering.
Sear the steak for 3 to 4 minutes per side for medium-rare, then transfer to a cutting board to rest for 5 minutes.
