Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with a side of garlic-sautéed green beans and a squeeze of bright lemon.
INGREDIENTS
7 oz Sockeye Salmon Fillet
120g Sweet Potato
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then steam or boil in water until completely fork-tender.
Drain the sweet potato and mash thoroughly until smooth, adding a pinch of sea salt for flavor.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the skin is crispy and the fish is cooked to your preference.
Remove the salmon from the pan and set aside to rest.
Add the remaining oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for 3-4 minutes until they are vibrant green and tender-crisp.
Plate the salmon over the sweet potato mash and serve with the garlic green beans on the side.
