Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the Russet potato thoroughly, prick it several times with a fork, and rub the skin with olive oil.
Place the potato on the baking sheet and roast for 45 to 50 minutes, or until the skin is crisp and the inside is tender when pierced.
While the potato is roasting, heat a non-stick skillet over medium heat and add the ground turkey.
Season the turkey with sea salt, black pepper, and garlic powder, breaking it up with a spatula until fully cooked and browned.
Once the potato is finished, slice it open lengthwise and gently fluff the interior with a fork.
Stuff the potato with the seasoned ground turkey and sprinkle the shredded cheddar cheese over the top.
Return the potato to the oven for 2 to 3 minutes until the cheese has completely melted.
Remove from the oven and top with a dollop of Greek yogurt and freshly snipped chives before serving.
