15g Yellow Moong Dal
120g Non-fat Greek Yogurt
100g Cauliflower Florets
50g Frozen Green Peas

PREPARATION
Preheat your oven to 400°F and toss the cauliflower florets with half of the olive oil and a pinch of turmeric.
Spread the cauliflower on a baking sheet and roast for 20 minutes until the edges are golden and caramelized.
Rinse the red lentils and yellow moong dal thoroughly under cold water until the water runs clear to remove excess starch.
In a medium pot, combine the rinsed lentils with 2.5 cups of water, a half teaspoon of turmeric, and the minced ginger; bring to a boil then simmer for 15-20 minutes until the lentils are soft and creamy.
While the lentils simmer, heat the remaining olive oil in a small pan over medium heat and sauté the minced garlic and cumin seeds until they become fragrant and lightly browned.
Stir the sautéed garlic mixture, frozen peas, and the roasted cauliflower into the pot of cooked lentils.
Remove the pot from the heat and gently fold in the non-fat Greek yogurt and garam masala, stirring until the dal is rich and velvety before serving.
