Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed green beans and creamy garlic-infused cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
2 cups Cauliflower florets
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic
PREPARATION
Place cauliflower florets and the garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Transfer the steamed cauliflower and garlic to a food processor or bowl; add the Greek yogurt and a pinch of salt, then blend or mash until creamy.
Steam the green beans for 5-6 minutes until tender-crisp and bright green.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Serve the seared salmon alongside the garlic mash and green beans, garnished with fresh lemon if desired.
