Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served over creamy mashed sweet potatoes and crisp-tender green beans sautéed with fragrant garlic.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
1 medium Sweet Potato
1 cup fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Sea Salt and Black Pepper to taste
PREPARATION
Peel the sweet potato and cut into cubes, then boil in a pot of water for 12-15 minutes until tender.
Drain the sweet potato and mash thoroughly with a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the remaining oil, green beans, and minced garlic.
Sauté the green beans for 5 minutes until they are crisp-tender and the garlic is fragrant.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans on the side.
