1.5 cups Brussels sprouts
1 tbsp Extra virgin olive oil
1 tbsp Balsamic glaze
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 tsp Fresh thyme
PREPARATION
Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper.
Trim the woody ends off the Brussels sprouts and slice each one in half lengthwise.
Place the sprouts on the baking sheet and toss with 0.5 tbsp of olive oil and half of the sea salt and black pepper.
Roast the sprouts for 20 to 25 minutes, tossing halfway through, until they are tender and the outer leaves are crispy and charred.
While the sprouts roast, season the chicken breast evenly with the garlic powder and the remaining sea salt and black pepper.
Heat the remaining 0.5 tbsp of olive oil in a medium skillet over medium-high heat.
Place the chicken in the skillet and sear for 6 to 8 minutes per side, or until the internal temperature reaches 165°F.
Remove the roasted sprouts from the oven, drizzle with the balsamic glaze, and toss to coat thoroughly.
Serve the seared chicken alongside the glazed sprouts and garnish with the fresh thyme leaves.
