Seared Salmon Fillet with Roasted Sweet Potato and Asparagus
Pan-seared wild salmon served alongside roasted sweet potato and asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
120g Sweet Potato, cubed
100g Asparagus spears
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
1/2 tsp Garlic Powder
Pinch of Sea Salt and Black Pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil and a pinch of sea salt and pepper.
Spread the potatoes on the baking sheet and roast for 15 minutes.
Add the asparagus to the sheet, drizzle with the remaining oil, and roast for another 10 minutes until the vegetables are tender.
While vegetables roast, season the salmon fillet with garlic powder, salt, and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crispy and the flesh is flaky.
Serve the salmon immediately with the roasted vegetables and a bright squeeze of fresh lemon juice.
