Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
Peel the carrots and slice them into 2-inch batons or diagonal coins.
In a small bowl, whisk together the maple syrup, balsamic vinegar, and half of the olive oil.
Place the carrots on one side of the baking sheet and toss with the maple-balsamic mixture and a pinch of sea salt.
Rub the chicken breast with the remaining olive oil, garlic powder, sea salt, black pepper, and fresh thyme leaves.
Place the chicken on the other side of the baking sheet and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and carrots are tender.
Remove from the oven and let the chicken rest for 5 minutes before slicing.
Serve the sliced chicken alongside the caramelized carrots, drizzling any remaining glaze from the pan over the top.
