Seared Salmon Filet with White Bean and Broccoli Mash
Pan-seared wild salmon served over a velvety mash of white beans and steamed broccoli, finished with a bright squeeze of lemon and fresh dill.
INGREDIENTS
10 oz Wild Sockeye Salmon Filet
1 cup Cannellini Beans, rinsed
2 cups Broccoli Florets
0.25 cup Non-fat Greek Yogurt
1 tsp Olive Oil
1 tbsp Lemon Juice
1 clove Garlic, minced
1 tbsp Fresh Dill, chopped
PREPARATION
Steam the broccoli florets until they are very tender and bright green.
In a food processor or using a potato masher, combine the cooked broccoli, rinsed white beans, Greek yogurt, minced garlic, and lemon juice.
Pulse or mash until the mixture reaches a smooth, velvety consistency, then season with salt and pepper.
Pat the salmon filet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Spoon the warm broccoli and bean mash onto a plate and top with the seared salmon.
Garnish with fresh chopped dill and an extra wedge of lemon before serving.
