Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served alongside steamed green beans and a velvety garlic cauliflower mash, finished with a bright squeeze of lemon.
INGREDIENTS
6.5 ounces Sockeye Salmon
2 cups Cauliflower florets
1 cup Green beans
1 tablespoon Olive oil
1 clove Garlic
PREPARATION
Bring a pot of water to a boil with a steamer basket.
Place the cauliflower florets in the basket and steam for 10-12 minutes until very soft.
Add the green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender.
Remove the cauliflower and blend or mash it with minced garlic, half of the olive oil, and a pinch of salt until smooth.
Pat the salmon fillet dry and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side down for 4 minutes, then flip and cook for another 3 minutes until the exterior is golden and crisp.
Plate the cauliflower mash, top with the salmon, and serve alongside the green beans.
