Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over creamy garlic-infused mashed cauliflower with a side of crisp steamed green beans.
INGREDIENTS
5.5 ounces Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Fresh Green Beans
1.5 teaspoons Extra Virgin Olive Oil
1 teaspoon Grass-fed Butter
1 tablespoon Non-fat Greek Yogurt
2 cloves Fresh Garlic
PREPARATION
Chop cauliflower into small florets and peel the garlic cloves.
Steam the cauliflower and garlic until very tender, approximately 10-12 minutes.
Trim the green beans and steam them in a separate basket for 5-7 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy and golden.
Carefully flip the salmon and cook for an additional 2-3 minutes until it reaches your desired level of doneness.
Drain the steamed cauliflower and garlic, then mash them together with the grass-fed butter and Greek yogurt until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
