PREPARATION
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat the extra virgin olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side down and press gently with a spatula for 10 seconds to ensure even contact; cook for 4-5 minutes until the skin is very crispy.
Carefully flip the fillet and cook for another 2-3 minutes until the salmon is opaque and reaches your desired level of doneness.
While the salmon cooks, toss the arugula and halved cherry tomatoes with lemon juice in a small bowl.
Arrange the arugula salad on a plate and place the hot salmon fillet on top.
