Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served over nutty brown rice with crisp-tender green beans sautéed in fragrant garlic.
INGREDIENTS
2.5 oz Wild Atlantic Salmon
1/2 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tbsp Avocado Oil
2 cloves Garlic, minced
PREPARATION
Prepare the brown rice according to package instructions or reheat pre-cooked rice until steaming.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the avocado oil in a non-stick skillet over medium-high heat.
Season the salmon with a pinch of salt and pepper, then place it skin-side down in the hot skillet.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness is reached.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining avocado oil and the green beans.
Sauté the green beans for 5 minutes until they are bright green and crisp-tender.
Add the minced garlic to the beans and cook for 1 minute until fragrant, being careful not to burn it.
Plate the brown rice alongside the garlic green beans and top with the seared salmon.
