Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served with garlic-infused green beans and whipped cauliflower mash, finished with a squeeze of zesty lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
2 cloves Garlic, minced
1 teaspoon Avocado Oil
1 teaspoon Ghee
1 teaspoon Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets until they are very fork-tender, then drain them thoroughly to remove excess moisture.
Mash the steamed cauliflower with the ghee and a pinch of sea salt until the texture is smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a little salt and black pepper.
Heat the avocado oil in a large skillet over medium-high heat and place the salmon skin-side down in the pan.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until just opaque in the center.
Remove the salmon from the pan and add the green beans and minced garlic to the same skillet, sautéing for 3-4 minutes until tender-crisp.
Plate the salmon over a bed of the mashed cauliflower with the garlic green beans on the side and finish with a squeeze of fresh lemon juice.
