Seared Salmon with Roasted Sweet Potato and Green Beans
Pan-seared sockeye salmon paired with oven-roasted sweet potato cubes and tender green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Sockeye Salmon Fillet
150g Sweet Potato, cubed
150g Green Beans, trimmed
1.5 tsp Avocado Oil
1 tbsp Lemon Juice
0.25 tsp Sea Salt
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes and trimmed green beans with one teaspoon of avocado oil, salt, and pepper.
Spread the vegetables in a single layer on the baking sheet and roast for 20-25 minutes until the potatoes are tender and lightly browned.
While the vegetables roast, pat the salmon fillet dry with a paper towel and season with the remaining salt and pepper.
Heat the remaining half teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Plate the seared salmon alongside the roasted vegetables and drizzle the entire dish with fresh lemon juice before serving.
