INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green Beans
2 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic and 1 teaspoon of ghee, and mash or blend until smooth and creamy.
Season the salmon fillet with a pinch of salt and black pepper.
Heat the remaining 1 teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve with the steamed green beans on the side.
