Garlic Shrimp Alfredo with Protein Pasta
Sautéed shrimp and protein pasta tossed in a creamy, garlic-infused yogurt sauce with wilted spinach for a velvety and satisfying finish.
INGREDIENTS
2 oz Barilla Protein+ Pasta
5 oz Shrimp
1 tsp Olive oil
2 cloves Garlic
0.25 cup Plain Greek yogurt
2 tbsp Parmesan cheese
1 cup Fresh baby spinach
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Red pepper flakes
1 tbsp Fresh parsley
1 tbsp Lemon juice
PREPARATION
Bring a large pot of salted water to a boil and cook the protein pasta according to package directions; reserve 0.25 cup of the pasta water before draining.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add the shrimp to the skillet and season with sea salt, black pepper, and red pepper flakes, sautéing until pink and opaque throughout.
Stir in the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
Reduce the heat to low, then add the cooked pasta and fresh baby spinach to the skillet, tossing until the spinach just begins to wilt.
In a small bowl, whisk together the Greek yogurt and parmesan cheese, then pour the mixture into the skillet along with a splash of the reserved pasta water.
Toss everything together until a creamy sauce coats the pasta, adding more pasta water as needed to reach your desired consistency.
Remove from heat and finish with a squeeze of fresh lemon juice and chopped parsley before serving.
