Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon and garlic green beans served over nutty brown rice with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Salmon Fillet
1/2 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Season the salmon fillet on both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until the bottom is golden and crispy.
Flip the fillet carefully and cook for another 3 to 4 minutes until the salmon is just cooked through and opaque.
While the salmon cooks, heat the remaining oil in a separate skillet and sauté the minced garlic until fragrant.
Add the green beans and a tablespoon of water to the garlic pan, then cover and steam for 3 minutes until tender-crisp.
Plate the salmon alongside the warm brown rice and garlic green beans, finishing the dish with a fresh squeeze of lemon juice.
