Preheat your oven to 400°F (200°C). Scrub the potato clean and prick it several times with a fork.
Rub the potato skin with olive oil and a pinch of sea salt. Place it directly on the oven rack and bake for 45-50 minutes until tender.
While the potato bakes, cook the turkey bacon in a skillet over medium heat until crispy. Remove, pat dry with a paper towel, and crumble into small pieces.
In the same skillet, brown the ground turkey over medium-high heat, seasoning it with garlic powder, black pepper, and the remaining salt until fully cooked.
Once the potato is done, slice it in half lengthwise. Carefully scoop out the flesh into a mixing bowl, leaving a thin shell of potato skin.
Mash the potato flesh with the Greek yogurt, cooked ground turkey, and half of the shredded cheddar cheese until well combined.
Spoon the mixture back into the potato skins. Top with the remaining cheddar cheese and the crumbled turkey bacon.
Place the stuffed potatoes on a baking sheet and broil for 2-3 minutes until the cheese is melted and bubbling.
Garnish with freshly chopped green onions before serving.
