Deconstructed Sushi Rice Bowl
Pan-seared shrimp served over fluffy rice with creamy avocado and crisp cucumber, finished with a drizzle of savory tamari and toasted sesame oil.
INGREDIENTS
8 oz Shrimp
0.5 cup Cooked white rice
0.25 cup Shelled edamame
0.25 whole Avocado
0.5 cup Cucumber
2 tbsp Green onions
1 tsp Toasted sesame oil
1 tbsp Tamari
1 tsp Rice vinegar
1 sheet Nori
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the shrimp dry with paper towels and season evenly with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the toasted sesame oil.
Place the shrimp in the skillet and sear for 2-3 minutes per side until they are pink, opaque, and slightly caramelized.
In a small glass jar or bowl, whisk together the tamari, rice vinegar, and the remaining toasted sesame oil to create the dressing.
Place the warm cooked rice in the center of a serving bowl.
Arrange the seared shrimp, shelled edamame, sliced cucumber, and avocado around the rice.
Garnish the bowl with sliced green onions and strips of shredded nori sheet.
Drizzle the tamari dressing over the entire bowl just before serving.
