INGREDIENTS
5.5 oz Grass-fed sirloin steak
1 cup Sweet potato
1 cup Brussels sprouts
0 tbsp Avocado oil
1 tsp Garlic powder
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat oven to 400°F (200°C).
Toss cubed sweet potatoes and halved Brussels sprouts with half the avocado oil, sea salt, and black pepper on a baking sheet.
Roast vegetables for 20-25 minutes until the sweet potatoes are tender and Brussels sprouts are crispy.
Season the beef with garlic powder, rosemary, thyme, and remaining salt and pepper.
Heat the remaining avocado oil in a cast-iron skillet over medium-high heat.
Sear the beef for 3-4 minutes per side for medium-rare, or until desired doneness is reached.
Let the beef rest for 5 minutes before slicing and serving alongside the roasted vegetables.
