Trim the woody ends off the asparagus and toss the spears on the baking sheet with olive oil, half of the sea salt, and half of the black pepper.
Roast the asparagus for 10-12 minutes until tender but still vibrant green.
While the asparagus roasts, pat the salmon fillet completely dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the ghee in a cast-iron or stainless steel skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side down and press gently with a spatula for 10 seconds to ensure even contact; sear for 4-5 minutes until the skin is crispy.
Carefully flip the salmon and cook for an additional 2-3 minutes for medium-rare to medium doneness.
During the last minute of cooking, add the minced garlic to the pan and squeeze the lemon juice over the fish.
Serve the salmon immediately alongside the roasted asparagus, drizzling any remaining pan juices over the top.
