Baked Jalapeño Poppers with Chipotle Ranch
Lean ground turkey and sharp cheddar stuffed into spicy jalapeños, baked until the filling is bubbling and golden-brown.
INGREDIENTS
6 oz Ground turkey (93% lean)
4 large Jalapeño peppers
0.25 cup Non-fat Greek yogurt
1 oz Sharp cheddar cheese
1 tbsp Almond flour
1 tsp Garlic powder
1 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 cup Non-fat Greek yogurt
1 tsp Chipotle peppers in adobo sauce
0.5 tsp Lime juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the jalapeño peppers in half lengthwise and use a spoon to scrape out the seeds and white membranes.
Place a skillet over medium heat and brown the ground turkey until fully cooked, seasoning with half of the garlic powder and onion powder.
In a medium bowl, combine the cooked turkey, 0.25 cup Greek yogurt, shredded cheddar cheese, sea salt, and black pepper.
Spoon the turkey mixture into the jalapeño halves and sprinkle the tops evenly with almond flour.
Place the stuffed peppers on the baking sheet and bake for 15-18 minutes until the peppers are tender and the tops are golden.
While the peppers bake, whisk together the remaining 0.25 cup Greek yogurt, chipotle in adobo, lime juice, and the remaining garlic and onion powder to create the ranch dip.
Serve the warm poppers with the smoky chipotle ranch on the side.
