Sautéed shrimp and rice noodles tossed in a tangy tamarind-free sauce, garnished with crunchy bean sprouts and fresh lime for a vibrant finish.
INGREDIENTS
6 oz Shrimp
1.5 oz Brown rice noodles
1 large Egg
1 tsp Avocado oil
2 clove Garlic
1 cup Bean sprouts
2 stalk Green onions
1 tbsp Tamari
1 tbsp Lime juice
1 tsp Maple syrup
0.25 tsp Red pepper flakes
PREPARATION
Soak the brown rice noodles in a bowl of very hot water for 8-10 minutes until tender but firm, then drain.
In a small bowl, whisk together the tamari, lime juice, maple syrup, and red pepper flakes to create the stir-fry sauce.
Heat the avocado oil in a large skillet or wok over medium-high heat and add the minced garlic, sautéing for 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque, then push them to one side of the pan.
Crack the egg into the empty side of the skillet, scrambling it quickly until just set.
Toss in the drained noodles, bean sprouts, and the prepared sauce, stir-frying everything together for 2 minutes.
Remove from heat and stir in the sliced green onions before serving.
