1 cup Baby spinach

PREPARATION
Preheat your oven to 400°F (200°C).
Season the chicken breast evenly on both sides with sea salt and black pepper.
Heat the extra virgin olive oil in a large oven-safe skillet over medium-high heat.
Place the chicken in the skillet and sear for 3-4 minutes per side until a golden crust forms.
While the chicken sears, clean and slice the cremini mushrooms and mince the garlic cloves.
Scatter the mushrooms and minced garlic into the skillet around the chicken pieces.
