Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic mashed cauliflower with a side of tender-crisp steamed green beans.
INGREDIENTS
7 oz Wild Salmon Fillet
3 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedge
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5-6 minutes until tender-crisp and bright green.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic, salt, and pepper, and mash or blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the exterior is golden and the fish is cooked through.
Serve the seared salmon immediately over the garlic mashed cauliflower with the green beans on the side and a fresh lemon wedge.
